In the datasheets there is no mention of a maximum output capacitance, does this mean there is no maximum?

It depends on your application, output capacitance value and its respective ESR value chosen will aid with lowering the output ripple voltage. The recommended capacitances mentioned in the datasheet should suffice for most applications. I have seen +100uF on output rails, it is dependent on user’s application - depending on availability of space on the board, size, and voltage ripple spec, output rail stability, inrush current.
You may also utilize the voltage ripple equation; it will help in the design and component selection.
