For the thermistor, could you elaborate on what kind of schematic you are looking for?
Based on the operating window of 0°C - 50°C, a thermistor whose operating temperature contains this window is a good starting point (E.g. thermistor with operating temperature range -40°C - 125°C).
Another consideration would be the thermistor’s resistance tolerance. For instance, higher resistance values are more preferred for battery-powered systems.
In the MP2718H datasheet, there is a section that goes over the process for choosing resistors based on selected NTC thermistor.

NCP18XH103 is a SMD thermistor. I need one with that can be extendded as my battery is not near the board and can you provide schematic for that as well?

You are correct, the thermistor mentioned on the datasheet is SMD. Based on your specifications it seems like you would need a lead-type NTC thermistor.
We do not have have thermistors on our portfolio, thus I do not have a datasheet I can share.
Nevertheless, based on the information I provided earlier on this post you can easily find lead-type alternative options.
For instance, I can suggest looking into the NTCLE100E3 series as a starting point.
